Hello. I am very new to all this stuff, i recently got my first digital piano, a Casio Privia PX-s7000, which has a very nice Gr Piano "hamburg" sound,
However im am unsure if the default soundfont "grand piano.sf2" is that same sound or if its just a default set by the app.

It would not be quite the same.
If you want to record the sound of your piano, you can connect it with a Line In cable to an audio interface connected to your computer / phone.
If that sounds difficult, please just use the default sound in the SeeMusic app.
