It should! It mostly would come down to how much Unity has fleshed out support for the Apple chips already. I don't have access to the new Mac laptop yet, so I can't confirm for sure.
If there are bugs, Unity will likely fix them soon, and they should be resolved when I update Unity in coming updates.
Please let me know if you run the app on a Mac with the new chip and can confirm or deny whether there are any issues!
